Toppings

  • 1/4 cup ricotta cheese Creamy heart of the pizza.
  • 1/2 cup mozzarella cheese Contributes to the cheesy goodness.
  • 1/4 cup Parmesan cheese Adds a savory depth.
  • 1 tablespoon olive oil For drizzling on top.
  • 1 tablespoon honey For a sweet finish.
  • 1/2 teaspoon red pepper flakes Optional for heat.

Instructions
 

Preparation

  • In a medium bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5 minutes.
  • In a separate large bowl, mix together the all-purpose flour and salt.
  • Once the yeast mixture is frothy, add it to the flour and salt mixture along with the tablespoon of olive oil.
  • Turn the dough out onto a lightly floured surface and knead it for about 8-10 minutes.
  • Place the kneaded dough into a lightly oiled bowl, cover it, and let it rise in a warm spot for 1 to 1.5 hours.
  • While the dough is rising, prepare the lemon topping by combining ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a small bowl.

Cooking

  • Preheat your oven to 475°F (245°C).
  • After the dough has risen, punch it down and roll it into a 12-inch round shape.
  • Transfer the rolled-out dough onto parchment paper or a pizza peel.
  • Spread the creamy cheese mixture evenly over the surface of the dough.
  • Sprinkle fresh thyme over the cheese mixture.
  • Slide the pizza onto the preheated pizza stone or baking sheet.
  • Bake for 10-12 minutes until the crust is golden and cheese bubbles.
  • Remove from the oven and drizzle with olive oil and honey. Optionally add red pepper flakes.
  • Allow to cool slightly before slicing and serving.

Notes

Allowing the dough to rise properly is essential for a light texture. Store leftovers in an airtight container in the refrigerator for up to three days.
