  • Place the sliced eggplant in a large bowl. Drizzle with olive oil and sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
  • Preheat the air fryer to 375°F (190°C) for about 3-5 minutes.
  • Lay the seasoned eggplant slices in a single layer in the air fryer basket, avoiding overcrowding.

Cooking

  • Air fry the eggplant for about 12-15 minutes, flipping halfway through, until golden brown and crispy.
  • Transfer the cooked eggplant to a serving dish and garnish with fresh parsley if desired.

Notes

To enhance flavors, consider marinating the eggplant for 30 minutes before cooking or adding red pepper flakes for a spicy kick. Avoid sogginess by salting the slices and letting them rest before seasoning.
