Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter until well combined. Press this mixture into the bottom of the pan.
  • Bake the crust for 10 minutes. Once done, remove it from the oven and allow it to cool completely.

Cheesecake Filling

  • In a large bowl, beat together cream cheese and sugar until smooth.
  • Add in the eggs one at a time, mixing well after each addition.
  • Blend in sour cream, lemon juice, lime juice, lemon zest, and lime zest.
  • Gently fold in chopped cherries and chopped pistachios.

Baking

  • Pour the batter over the cooled crust and smooth out the top.
  • Bake in the oven for 55-60 minutes, or until the center is slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door slightly ajar for about 1 hour.

Chilling

  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours before serving.
