Ingredients
  

For the Sandwich

  • 4 slices slices of sandwich bread Choose between white, whole wheat, or sourdough.
  • 1.5 cups leftover mac and cheese Can be cold or at room temperature.
  • 0.5 cup shredded extra sharp cheddar cheese For added flavor.
  • 2 tablespoons unsalted butter, softened For a golden-brown crust.

Preparation

  • Arrange the bread slices on a clean cutting board.
  • Distribute about 3/4 cup of leftover mac and cheese evenly over two slices of bread.
  • Top the mac and cheese on each sandwich with 1/4 cup of shredded cheddar cheese.
  • Place the remaining slices of bread on top to form closed sandwiches.
  • Spread a thin layer of softened butter on the outer sides of both sandwiches.

Cooking

  • Heat a nonstick skillet or griddle over medium-low heat.
  • Gently lay the sandwiches in the pan, buttered side down.
  • Cook for about 3 to 4 minutes per side, pressing lightly until golden brown and cheese is melted.
  • Let the sandwiches rest for a minute before cutting diagonally and serving hot.

Notes

Tips: Use day-old bread for better texture. Mix different cheeses for variety, and add extras like tomato or bacon if desired.
