Ingredients
  

For the chia pudding

  • 350 ml milk of choice Coconut milk enhances the tropical flavor.
  • 1.5 tbsp maple syrup Natural sweetness that complements the fruits.
  • 0.5 tsp vanilla Adds a fragrant note.
  • 65 g chia seeds These little seeds are nutritional powerhouses.

For the fruit layers

  • 1/2 piece pink dragon fruit Blended for color and unique taste.
  • 1 large Alfonso mango Known for its sweetness and flavor.

For serving

  • 1 cup vanilla coconut yogurt For a creamy topping.

Instructions
 

Preparation of Chia Mixture

  • In a measuring jug, combine 350 ml of your chosen milk, 1 ½ tbsp of maple syrup, and ½ tsp of vanilla. Stir well.
  • Add 65 g of chia seeds and mix thoroughly using a fork.
  • Allow this mixture to set for at least four hours, ideally overnight, stirring every couple of hours to prevent clumping.

Prepare the Dragon Fruit

  • Peel and chop half of the pink dragon fruit, then blend until smooth.

Mix Dragon Fruit with Chia Pudding

  • Once the chia mixture has set, gently fold in the pureed dragon fruit.

Create the Mango Coulis

  • Peel and roughly dice the mango, then blend until smooth.

Layer Your Pudding

  • In serving glasses, layer the dragon fruit chia pudding, mango coulis, and a spoonful of coconut yogurt. Repeat layers if desired.

Notes

If you prefer a smoother texture, blend the chia pudding before layering. Adjust the maple syrup sweetness to taste. For added flavor, steep chia seeds in flavored tea or add coconut water.
