Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup fresh mango puree

Optional Additions

  • 1/4 cup shredded coconut
  • 1/2 teaspoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, cream the softened butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Slowly stir in the mango puree until well combined.
  • Gradually add the dry mixture to the wet mixture, mixing until just combined.
  • If desired, fold in shredded coconut and ground cinnamon.
  • Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart.

Baking

  • Bake for 10-12 minutes or until the edges are golden.
  • Allow the cookies to cool for a few minutes on the baking sheet before transferring them to a wire rack.
  • Enjoy the cookies warm or at room temperature.

Notes

Use fresh mango puree for the best flavor. Keeping the dough chilled can help maintain cookie shape.
