For the Creamy Feta Tzatziki

For the Gyros

Instructions
 

Marinate the Chicken

  • In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper until well combined.
  • Add the chicken, making sure it’s thoroughly coated in the marinade. Cover and let it sit for at least 20 minutes, or up to 4 hours for deeper flavors.

Cook the Chicken

  • Heat a skillet or grill pan over medium-high heat. Once hot, add the marinated chicken.
  • Cook for approximately 5–6 minutes on each side, until golden and cooked through.
  • Once done, remove from heat and let it rest for about 5 minutes before slicing into strips.

Prepare the Feta Tzatziki

  • In a mixing bowl, combine the Greek yogurt, crumbled feta, grated cucumber, lemon juice, minced garlic, olive oil, and chopped dill (or mint).
  • Stir until the mixture is smooth and creamy. Taste and adjust seasoning with salt and pepper as needed.

Assemble the Gyros

  • Take the warmed pita breads and lay them flat on a serving platter.
  • Spread a generous spoonful of tzatziki down the center of each pita.
  • Layer with sliced chicken, cherry tomatoes, cucumber, onion, and lettuce.
  • Add more tzatziki and extra feta on top if desired.

Serve

  • Fold the pita in half and wrap in parchment or foil for easy eating.
