Instructions
 

Preparation

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat until shimmering but not smoking.
  • Add the finely diced onion and sauté for about 4-5 minutes until it softens and turns lightly golden.
  • Incorporate the minced garlic and cook for an additional 30 seconds until fragrant.
  • Toss in the chopped spinach and cook for 1-2 minutes until wilted. Remove from heat to cool slightly.
  • In a large bowl, mix ground chicken, panko breadcrumbs, Greek yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and black pepper. Gently stir in the cooled onion and spinach mixture.
  • Form the mixture into 6 to 8 patties, about ½ inch thick.

Cooking

  • Heat the remaining 2 tablespoons of olive oil in the skillet over medium heat.
  • Cook the patties for 4-5 minutes on each side until golden brown and cooked through (internal temperature should be 165°F).
  • Allow the patties to rest for 2 minutes before serving.
