Instructions
 

Preparation

  • In a large skillet over medium heat, add the olive oil and allow it to warm until it shimmers slightly.
  • Add the ground chicken to the skillet and cook until browned, breaking it apart with a spoon (about 6-8 minutes).
  • Once the chicken is browned, add the chopped onion and minced garlic. Sauté until the onion is translucent (about 2-3 minutes).
  • Stir in the chopped bell pepper, dried oregano, smoked paprika, ground cumin, and season with salt and pepper to taste. Continue cooking for another 3-4 minutes.
  • Next, add the halved cherry tomatoes and sliced Kalamata olives. Mix well and let the tomatoes cook down for about 5 minutes.
  • Gently sprinkle the crumbled feta cheese over the skillet mixture and allow it to melt slightly.
  • Remove the skillet from heat. Stir in the chopped fresh parsley and the juice of half a lemon.
  • Taste and adjust seasoning if necessary. Serve warm.

Notes

Feel free to experiment with additional herbs like thyme or dill. You can substitute ground chicken for turkey or beef. This dish is versatile and customizable.
