  • 2 tablespoons mirin Adds glaze and slight sweetness.
  • 1 tablespoon soy sauce Rounds out the glaze.
  • 1 tablespoon honey Balances flavors beautifully.
  • 1 teaspoon grated fresh ginger Adds warmth and spice.
  • 1 clove garlic, minced Provides aromatic notes.
  • sesame seeds for garnish (optional) Adds crunchy texture.
  • chopped green onions for garnish (optional) Brightens the dish visually and flavor-wise.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss the eggplant cubes with olive oil, salt, and pepper on a baking sheet.

Roasting

  • Roast for 20-25 minutes, flipping halfway through.

Glazing

  • While the eggplant is roasting, whisk together the miso paste, mirin, soy sauce, honey, ginger, and garlic.
  • Once the eggplant is tender, remove it from the oven and brush the glaze over the cubes.

Finishing Touch

  • Return the eggplant to the oven for another 5-7 minutes.
  • Garnish with sesame seeds and green onions if desired. Serve warm.

Notes

Add a splash of rice vinegar for acidity or adjust the sweetness by varying the honey. Experiment with red pepper flakes or marinate the eggplant for more flavor.
