For the Sauce

  • 1 can (14 oz) diced tomatoes Adds acidity and richness.

Preparation

  • In a large bowl, mix together the ground beef or lamb, finely chopped onion, minced garlic, chopped parsley, and spices (cumin, coriander, paprika, cayenne, salt, and black pepper). Use your hands to combine until well incorporated, then shape them into small meatballs, about the size of a golf ball.

Cooking

  • Heat olive oil in a tagine or large skillet over medium heat. Once hot, carefully add the meatballs, ensuring not to overcrowd the pan. Cook until browned on all sides, about 5-7 minutes.
  • Pour the diced tomatoes and tomato sauce over the meatballs in the pan. Coat well for maximum flavor.
  • Bring the stew to a gentle simmer. Cover and reduce heat to low. Allow to cook for 30-40 minutes until the meatballs are cooked through and tender. For a traditional touch, crack the eggs over the sauce 10 minutes before cooking time is up. Cover until the eggs are set.

Serving

  • Garnish the stew with chopped cilantro and serve hot with crusty bread or fluffy couscous to soak up the rich sauce.

Notes
