Preparation

  • In a Dutch oven, melt the butter over medium heat until bubbly and fragrant.
  • Add the sliced mushrooms and cook for about 5 minutes, allowing them to release their liquid.
  • Reduce the heat to medium-low and continue cooking for an additional 10–15 minutes until the liquid has evaporated.
  • Stir in the diced onion, minced garlic, fresh thyme, and parsley, sautéing for 2–3 minutes until fragrant.
  • Raise the heat back to medium and sprinkle in the flour; cook for 3–4 minutes.
  • Gradually pour in the chicken broth, stirring constantly to avoid clumps.
  • Once well combined, stir in the heavy cream until smooth and creamy.
  • Carefully transfer the soup to a blender in batches, blending until completely smooth.
  • Return the blended soup to the pot and let it simmer on medium-low heat for about 10 minutes.
  • Season with salt and pepper to taste. Serve warm.

Notes

For enhanced flavor, use an assortment of mushrooms and consider adding lemon juice or truffle oil before serving. You can also add cooked rice or quinoa for a heartier option.
