  • 3 cups vegetable or peanut oil For frying.
  • 1/2 cup cayenne pepper Adjust for heat preference.
  • 1/4 cup light brown sugar Balances the spice.
  • 2 tablespoons smoked paprika Adds a smoky flavor.
  • 4 pieces brioche buns Soft and perfect for the sandwich.

Instructions
 

Marinate the Chicken

  • Marinate the chicken thighs in buttermilk for at least 30 minutes or up to 4 hours for enhanced flavor and tenderness.
  • In a shallow dish, mix the all-purpose flour with 1 tablespoon of salt and 1 teaspoon of black pepper.

Heat the Oil

  • Heat the oil in a deep pot or Dutch oven to 325°F (160°C).
  • Remove the marinated chicken from the buttermilk allowing excess to drip off, then dredge thoroughly in the flour mixture.

Fry the Chicken

  • Carefully place the coated chicken into the hot oil, frying for about 6-8 minutes per side or until golden brown and cooked through.
  • Transfer fried chicken to a wire rack to cool slightly.

Prepare the Hot Sauce

  • In a small bowl, whisk together 1/2 cup of the hot frying oil, cayenne pepper, brown sugar, and smoked paprika until smooth.

Assemble the Sandwiches

  • Dip each piece of fried chicken into the hot sauce mixture, then place it on a toasted brioche bun.
  • Top with dill pickle chips and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place chicken in a preheated oven at 375°F (190°C) for about 15 minutes.
