For the Dill Pickle Aioli

  • 1/2 cup mayonnaise A creamy base for the aioli.
  • 2 tablespoons dill pickle juice Adds zing to the aioli.

Preparation

  • Begin by marinating the chicken thighs in buttermilk for at least 2 hours, preferably overnight.
  • In a large mixing bowl, combine flour, cayenne pepper, paprika, garlic powder, onion powder, salt, and pepper.

Cooking

  • Retrieve the marinated chicken, shake off excess buttermilk, and coat thoroughly in the prepared seasoned flour mixture.
  • Heat oil in a deep skillet over medium-high heat, then add coated chicken thighs and fry for 6-8 minutes on each side until golden brown.
  • Drain fried chicken on paper towels.
  • Prepare the dill pickle aioli by mixing mayonnaise and dill pickle juice in a small bowl.

Assembly

  • Slice slider buns in half, place fried chicken on the bottom half, add dill pickle slices, and top with the dill pickle aioli. Close with the top half of the bun.

Notes

Chef’s Secret: Mix more cayenne pepper into your flour for extra heat. For a milder flavor, reduce the amount. Optional extras include a drizzle of honey or sriracha.
