  • In a large skillet, heat a splash of olive oil over medium heat until shimmering.
  • Add the diced onion and bell pepper to the skillet. Sauté for about 5 minutes until softened and fragrant.
  • Stir in the minced garlic and allow it to cook for another minute.
  • Add the sausage to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through.
  • Stir in the rice, smoked paprika, drained black beans, chicken broth (or water), salt, and pepper.
  • Bring the mixture to a boil. Once boiling, reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  • Fluff the rice gently with a fork and serve hot, garnished with fresh chopped cilantro if desired.

Notes

Choose quality sausage for more flavor. Feel free to add additional vegetables like corn or zucchini. Leftovers can be stored in the refrigerator for up to 3 days. This dish freezes well; just let it cool completely before storing.
