Preparation

  • Prep ingredients: grate the Parmesan cheese, finely chop the onion, and mince the garlic cloves. Pat the salmon fillets dry.
  • Season both sides of the salmon fillets with garlic powder, sweet paprika, and half a teaspoon of salt and pepper.

Cooking the Salmon

  • In a large nonstick pan or skillet, heat the olive oil and butter over medium-high heat.
  • Add the seasoned salmon fillets to the skillet and sear for about 3-4 minutes per side.
  • Remove the salmon from the skillet and set aside.

Making the Orzo

  • Reduce heat to medium, add minced garlic and chopped onion to the pan, stirring for about two minutes.
  • Stir in dried thyme, remaining salt, and pepper, then add the dry orzo and toast for about one minute.
  • Pour in chicken broth, bring to a boil, then reduce the heat to medium-low and cook uncovered, stirring occasionally for about eight minutes.
  • Add baby spinach and stir in, wilting for about two minutes.
  • Stir in lemon juice and grated Parmesan, adjusting with more broth if necessary.
  • Return salmon to the skillet and simmer for 2-3 minutes.
