Instructions
 

Preparation

  • Bring a large pot of salted water to a boil. Cook rigatoni pasta according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  • Season the cubed beef sirloin with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Sear the beef until golden brown, about 5-7 minutes. Remove and set aside.
  • In the same skillet, reduce heat to medium, add diced onion, and sauté until soft (3-4 minutes). Add minced garlic and cook for an additional 30 seconds.

Cooking

  • Pour in beef stock, scraping browned bits from the skillet. Return seared beef and let simmer for about 5 minutes.
  • Stir in heavy whipping cream and Italian herbs. Allow to simmer gently for 1-2 minutes.
  • Remove from heat and stir in grated Parmesan until melted.
  • Toss cooked rigatoni into the creamy beef mixture, adding reserved pasta water as needed for desired consistency.

Serving

Notes
