Preparation

  • Preheat the oven to 175°C (350°F) and prepare a rimmed baking sheet by covering it with aluminum foil, lightly greasing the foil with butter.
  • Lay the graham crackers side by side on the tray, breaking them as necessary to fill the surface in a nice, even layer.

Cooking

  • In a medium saucepan, combine unsalted butter, brown sugar, chopped pecans, and salt. Heat over medium, stirring constantly, until the mixture comes to a rolling boil. Keep boiling for 2 minutes.
  • Remove from heat and stir in the vanilla extract.
  • Immediately pour the hot caramel pecan mixture over the graham crackers and use a spatula to spread it evenly to the edges.
  • Transfer the baking sheet to the oven and bake for approximately 10 minutes, or until the topping is bubbling and golden.
