Preparation

  • Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine egg whites and cream of tartar, then beat on medium speed until soft peaks start to form (about 2-3 minutes).
  • Gradually add granulated sugar, about a tablespoon at a time, while beating on medium-high speed until stiff peaks form and the mixture is glossy.
  • Gently fold in peppermint extract and crushed peppermint candies. Optionally, add red food coloring for a marbled effect.
  • Drop dollops of meringue mixture onto the prepared baking sheet, keeping them about 1 inch apart.

Baking

  • Bake the meringues in the preheated oven for 1.5 to 2 hours until dry and crisp.
  • After baking, turn off the oven and leave the meringues inside to cool completely.

Serving

  • Once cool, remove the meringue cookies from the baking sheet and serve.

Notes

For best results, use room temperature egg whites and ensure all equipment is clean and dry. Experiment with different flavors or shapes to personalize your cookies.
