Ingredients
  

Main Ingredients

  • 2 cups basmati rice
  • Salt to taste
  • 1/4 cup hot water for saffron
  • 2 tbsp yogurt
  • 2 tbsp olive oil for crispy bottom
  • 2 tbsp butter for crispy bottom
  • 1 orange (peel only)
  • 1 carrot, julienned
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 onion, thinly sliced
  • 1 cup chopped dried apricots
  • 1/2 cup golden raisins
  • 1/2 cup red raisins
  • 1 cup sliced almonds
  • 1 cup chopped pistachios
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp cardamom
  • 2 tbsp olive oil
  • 1 tbsp butter
  • Fresh parsley or mint for garnish

Instructions
 

Preparation

  • Soak the saffron in hot water to release its vibrant color and flavor.
  • Rinse the basmati rice under cold water until it runs clear, then soak in salted water for about 30 minutes.

Caramelizing Vegetables

  • In a small saucepan, combine orange peel, julienned carrot, sugar, and water. Simmer until caramelized and tender.
  • In a skillet, heat olive oil and butter over medium heat. Add onions and sauté until golden.
  • Stir in turmeric, cumin, and cardamom.

Combining Ingredients

  • Add dried apricots, raisins, almonds, and pistachios to the skillet. Cook for another 5-7 minutes.
  • Drain the soaked rice and parboil in heavily salted water for 6-8 minutes, then drain well.

Layering Rice

  • Combine yogurt and saffron water; spread it in the bottom of a pot.
  • Layer in olive oil and butter, followed by the drained rice, fruit and nut mixture, and finally layer the remaining rice on top.

Cooking

  • Cover the pot and cook on high heat for 3 minutes, then reduce heat and cook for 45 minutes.
  • Let the rice sit for about 10 minutes after cooking.
  • Invert onto a serving platter and garnish with parsley or mint.

Notes

To elevate your Persian Jeweled Rice, ensure your pot and butter are hot before layering rice. Customize nuts like adding walnuts or hazelnuts, and consider adding pomegranate seeds before serving.
