Preparation

  • Wash your vegetables thoroughly. Slice the cucumbers, onions, and bell peppers thinly using a sharp knife or mandoline.

Making the Pickling Solution

  • In a medium-sized bowl, combine the white vinegar, water, sugar, salt, black pepper, garlic powder, and dill if using. Stir until the sugar and salt dissolve completely.

Combining Ingredients

  • In a large mixing bowl, combine the sliced cucumbers, onions, and bell peppers. Pour the pickling solution over the vegetables and toss gently to mix.

Marination

  • Cover the bowl with plastic wrap or transfer the mixture into a large jar with a tight-fitting lid. Let it marinate in the refrigerator for at least one hour, preferably overnight.

Serving

  • After marination, stir the salad before serving. Enjoy it chilled.

Notes

For added spice, consider adding crushed red pepper flakes or jalapeƱos to the pickling solution. You can use alternative vinegars like apple cider or rice vinegar for a different taste. This salad keeps well and is better the next day.
