For the Filling and Coating

  • 1/2 cup pistachio cream spread Adds richness.
  • 1/2 cup shelled pistachios, finely chopped For rolling the cookies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2 to 3 minutes.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  • Scoop tablespoon-sized portions of dough, flatten slightly, place approximately 1 teaspoon of pistachio cream in the center, fold over, and seal it. Roll the filled dough into a ball.
  • Roll each ball in the finely chopped shelled pistachios and place them on the prepared baking sheets, spacing them about two inches apart.

Baking

  • Bake the cookies in the preheated oven for about 12-15 minutes, until the edges are lightly golden.
  • Allow the cookies to cool on wire racks before serving.

Notes

For best results, ensure your butter is at room temperature. Chill the dough if it is too sticky. If using a baking sheet multiple times, make sure it is cool before adding more cookies.
