Preparation

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the mini pumpkins and scoop out the seeds.
  • In a bowl, mix ricotta, mozzarella, parmesan, salt, pepper, and Italian seasoning.
  • Fill the pumpkins with the cheese mixture.
  • Brush the outside with garlic butter.
  • Place pumpkins on a baking sheet and bake for 25-30 minutes or until tender.
