  • 1/2 teaspoon vanilla extract Optional for flavor

For Topping

  • 1/2 cup pomegranate seeds
  • Fresh raspberries for garnish
  • Mint leaves for garnish

Preparation

  • Begin by mashing the fresh raspberries in a bowl. Add in the pomegranate juice and honey, mixing until everything is well combined and slightly juicy.
  • Spoon the raspberry mixture into the base of your serving glasses, creating a vibrant layer.
  • In a separate bowl, combine the almond milk, chia seeds, honey, and vanilla extract. Mix well, then set aside for about 15 minutes until the mixture begins to thicken.
  • Pour the thickened chia mixture over the raspberry base in each glass, completing the layering process.
  • Allow the dessert to set in the refrigerator for at least 2 hours.

Serving

  • Just before serving, garnish with a sprinkle of fresh pomegranate seeds, additional raspberries, and a sprig of mint leaves.

Notes

For a sweeter base, feel free to adjust the amount of honey or maple syrup. Experiment with different toppings like coconut or dark chocolate shavings.
