For the Spicy Thousand Island Dipping Sauce

  • 0.5 cup mayonnaise Acts as a creamy base.
  • 2 tablespoons ketchup Adds sweetness and acidity.
  • 1 tablespoon prepared horseradish Provides a sharp bite.
  • 1 teaspoon hot sauce Enhances the heat level.
  • 1 tablespoon sweet relish Contributes sweetness.
  • 0.25 teaspoon smoked paprika Adds smoky depth.

Instructions
 

Preparation

  • In a large mixing bowl, combine the chopped corned beef, drained sauerkraut, shredded Swiss cheese, softened cream cheese, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly distributed.
  • Form the mixture into walnut-sized balls and chill in the refrigerator for at least 30 minutes.
  • Set up a dredging station with flour, beaten eggs, and rye breadcrumbs. Coat each ball in flour, then egg, and finally breadcrumbs.

Cooking

  • Heat vegetable oil in a skillet or fryer to 350°F. Fry the Reuben balls in batches for about 3–4 minutes until golden brown and crisp. Drain on paper towels.
  • Alternatively, for air frying, cook at 400°F for approximately 10 minutes, flipping halfway.

Dipping Sauce

  • In a small bowl, combine mayonnaise, ketchup, horseradish, hot sauce, sweet relish, smoked paprika, and salt. Mix well and chill until serving.

Notes

To elevate flavors, add fresh herbs like dill or parsley. If short on time, use store-bought sauerkraut. For a healthier option, try baking instead of frying.
