  • 2 cups basmati rice Aromatic and fluffy, rinsed and soaked for 30 minutes.
  • 500 g chicken, cut into bite-sized pieces Ensure tenderness.
  • 1 cup butter Adds richness.
  • 1 large onion finely sliced Provides sweetness.
  • 2 ripe tomatoes chopped For freshness.
  • 1 cup heavy cream Ensures creaminess.
  • 2 tablespoons ginger-garlic paste Imparts warmth and depth.
  • 1 teaspoon cumin seeds Earthy flavor.
  • 1 teaspoon garam masala Spice blend for warmth.
  • 1/2 teaspoon turmeric powder For color.
  • to taste salt
  • fresh cilantro and mint leaves For garnish.

Instructions
 

Preparation

  • Rinse 2 cups of basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes and drain.
  • In a large pot, heat 1 cup of butter over medium heat until melted.
  • Add 1 teaspoon of cumin seeds and finely sliced onions; sauté until golden brown.
  • Stir in 2 tablespoons of ginger-garlic paste and 2 chopped tomatoes, cooking until the tomatoes soften.
  • Introduce the 500g of chicken pieces, season with salt, 1/2 teaspoon of turmeric, and 1 teaspoon of garam masala. Cook until browned, about 10-15 minutes.
  • Pour in 1 cup of heavy cream, stirring well, and allow to simmer for around 10 minutes.

Cooking

  • In another pot, bring 4 cups of water to a boil. Add soaked rice and cook until about 70% done. Drain the rice.
  • Layer the partially cooked rice over the chicken mixture in the pot.
  • Cover the pot with a tight lid, reduce heat, and allow cooking on low for 15-20 minutes.
  • Before serving, garnish with fresh cilantro and mint leaves.

Notes

Avoid overcooking the rice; it should be slightly underdone before layering. Let the dish rest covered for even flavors.
