Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the sweet potatoes. Slice them into 1/2-inch thick rounds.
  • In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika (if using).

Cooking

  • Spread the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 20-25 minutes, flipping halfway through.
  • Once tender and crispy, sprinkle crumbled feta on top while warm. Drizzle honey over the rounds.

Serving

Notes

For extra flavor, marinate sweet potatoes in olive oil and spices for 30 minutes before roasting. For crunchier texture, broil for last few minutes but watch closely.
