  • 8 rings Pineapple rings Fresh and juicy for the best flavor.
  • 1 cup Dark rum Contributes richness and depth.

Coating Ingredients

  • 1.5 cups All-purpose flour Forms the base for the crispy coating.
  • 10 oz Sweetened coconut flakes Provides a sweet crunch.
  • 2 large Eggs Acts as a binding agent.
  • 0.5 cup Coconut milk Adds creaminess to the egg mixture.
  • Vegetable oil for frying Creates the crispy exterior.

Dipping Sauce Ingredients

  • 4 oz Cream cheese, softened Base for a creamy dipping sauce.
  • 0.5 cup Powdered sugar Sweetens the sauce.

Instructions
 

Soaking the Pineapple

  • Soak the pineapple rings in dark and coconut rums for at least one hour, then drain and pat dry.

Coating the Pineapple

  • Set up three shallow bowls: one with flour, one with sweetened coconut flakes, and one with whisked eggs and coconut milk.
  • Dip each soaked pineapple ring in flour, then in the egg mixture, and finally coat with coconut flakes.

Frying the Pineapple

  • Heat vegetable oil in a deep pot to 350°F (175°C).
  • Carefully add the coated pineapple rings and fry for about one minute on each side until golden brown.
  • Remove them using a slotted spoon and drain on paper towels.

Making the Dipping Sauce

  • Mix softened cream cheese with powdered sugar and a little reserved rum until smooth and creamy.

Notes

For the best flavor, soak the pineapple overnight. Experiment with flavored rums for a twist, and consider using breadcrumbs instead of coconut flakes for a different texture.
