Preparation

  • Season the salmon fillets generously with kosher salt and freshly ground black pepper, and pat them dry with a paper towel.

Searing the Salmon

  • Heat the olive oil in a large skillet over medium-high heat. Once hot, place the salmon skin-side up in the skillet and sear for about 5 minutes until golden brown.
  • Carefully flip the fillets and cook skin-side down for another 5 minutes until the skin is crispy and the salmon is cooked through. Transfer to a plate and set aside.

Making the Sauce

  • In the same skillet, reduce the heat to medium-low, add the butter and let it melt, then sauté the minced garlic for about 30 seconds until fragrant.
  • Stir in the flour to form a roux and cook for 1 minute, allowing it to turn a light golden color.
  • Gradually whisk in the heavy cream, stirring continuously until smooth. Let it simmer for 3–4 minutes until thickened.

Finishing Touch

  • Mix in the lemon juice, zest, and chopped fresh dill. Adjust seasoning to taste.
  • Return the salmon to the skillet, spooning the lemon cream sauce over it, and simmer gently for an additional 2 minutes.

Serving

  • Serve hot, garnished with optional crushed red pepper flakes for heat, if desired.

Notes

Patting the salmon dry ensures a perfect sear. Fresh herbs like dill make a significant flavor difference.
