Preparation

  • Preheat your oven to 350°F (175°C). Ensuring the right temperature is crucial for achieving a perfect crust.
  • Mix the cookie crumbs, sugar, and melted butter in a bowl until fully combined. The mixture should resemble wet sand.
  • Press the mixture into a tart pan evenly across the bottom and up the sides. Bake for 10 minutes to set the crust, then let it cool completely.

Making the Ganache

  • In a saucepan, heat heavy cream over medium heat until it simmers. Pour it over the chopped dark chocolate in a bowl and stir until smooth.
  • Add 2 tablespoons of unsalted butter to the chocolate and mix well until glossy. Pour this decadent ganache into the cooled tart crust and refrigerate for at least 2 hours to set.

Making the Salted Caramel

  • In a clean saucepan, melt 1 cup of granulated sugar over medium heat, stirring occasionally, until it becomes a rich amber color.
  • Whisk in cubed unsalted butter until melted and combined. Gradually stir in ½ cup of heavy cream, mixing until smooth. Remove from heat and stir in 1 teaspoon of sea salt.
  • Pour the salted caramel over the set ganache in the tart. Chill for an additional 30 minutes before slicing into this vibrant, multi-layered dessert.

To ensure your salted caramel is smooth and glossy, avoid stirring the sugar too much as it melts. Consider garnishing your tart with flaky sea salt or a sprinkle of cocoa powder. For a more intense chocolate flavor, opt for high-quality dark chocolate with a high cocoa content.
