  • 1 cup Milk Use whole or almond milk for a creamy texture.
  • cup Olive Oil Adds richness and moisture; can be replaced with melted butter if desired.
  • ½ cup Yogurt Creamy yogurt enhances the texture; opt for dairy-free yogurt for a vegan version.

Dry Ingredients

  • 1 ½ cups All-Purpose Flour The base of your bread; gluten-free alternatives will work too.
  • 1 tablespoon Baking Powder Helps the bread rise; ensure freshness for the best texture.
  • 1 teaspoon Salt Essential for enhancing the flavor profiles of the dish.
  • 1 teaspoon Garlic Powder Optional, but it adds a warm, savory note.

Flavor Components

  • 1 cup Shredded Mozzarella Cheese Melt-in-your-mouth goodness; substitute with dairy-free cheese for those avoiding dairy.
  • ½ cup Sun-Dried Tomatoes Sweet and tangy, they provide a depth of flavor – fresh tomatoes can also be used.
  • ¼ cup Fresh Basil Leaves Bright and aromatic, basil adds a refreshing finish; dried basil can be substituted but will yield a milder flavor.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, whisk together the eggs, milk, olive oil, and yogurt until smooth.
  • In another bowl, mix the all-purpose flour, baking powder, salt, and garlic powder.
  • Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  • Fold in the shredded mozzarella cheese, sun-dried tomatoes, and chopped fresh basil.

Baking

  • Grease a loaf pan with oil or line it with parchment paper.
  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Bake for 30-35 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack. Enjoy warm or let it cool completely before slicing.

Notes

For an extra flavor kick, consider adding chopped olives or a sprinkle of chili flakes into the batter. Different cheeses like goat cheese or feta can be incorporated for unique flavor profiles. The bread can be served alongside a fresh balsamic reduction.
