  • 680 g beef stew meat or sirloin steak, cut into bite-sized pieces Use lean cuts for a healthier option.
  • 4 large potatoes, peeled and diced Regular or sweet potatoes can be used.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil For searing the beef.
  • 240 ml beef broth Low-sodium options can be used.
  • 1 tablespoon Worcestershire sauce
  • Salt, to taste Adjust based on preference.
  • Black pepper, to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 150 g shredded cheddar cheese For topping.
  • Fresh parsley or thyme, chopped (for garnish)

Instructions
 

Preparation

  • Heat the olive oil in a skillet over medium-high heat.
  • Season the beef pieces with salt and black pepper before searing them in the skillet. Brown the beef on all sides for about 3–4 minutes.
  • Transfer the seared beef into the slow cooker. Add the diced potatoes, onion, and minced garlic.
  • Pour in the beef broth and Worcestershire sauce, stirring gently to combine.
  • Sprinkle dried thyme and paprika over the mixture, then cover the slow cooker.

Cooking

  • Cook on low for 6–7 hours or on high for 3–4 hours until the beef is fork-tender and the potatoes are creamy.
  • About 15 minutes before serving, sprinkle shredded cheddar cheese over the top and cover to let it melt.

Serving

  • Garnish with freshly chopped parsley or thyme before serving hot.

Notes

This dish can be customized with various seasonings or vegetables. To store leftovers, cool and transfer to airtight containers for freezing.
