Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and slice the carrots into evenly-sized pieces. Toss them in a mixing bowl with olive oil, salt, pepper, cumin, and paprika until beautifully coated.
  • Spread the seasoned carrots on a baking sheet in a single layer.
  • While the carrots are roasting, cook the lentils according to package instructions until tender, then drain and let them cool.

Combining and Serving

  • In a large bowl, combine the cooled lentils with chopped red onion, halved cherry tomatoes, and lemon juice. Mix thoroughly.
  • Serve by spreading a layer of hummus on a plate, topping it with the lentil salad, and finishing with roasted carrots.
