Preparation

  • In a large pot over medium heat, add a splash of olive oil. Once hot, add the diced onions and sauté for 3-4 minutes until softened and translucent.
  • Add the ground turkey to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 5-7 minutes.
  • Stir in the minced garlic and continue to cook for an additional minute.
  • Add kidney beans, black beans, crushed tomatoes, and chicken broth to the pot. Stir well to combine.
  • Pour in the buffalo sauce, then add chili powder, cumin, and paprika. Stir thoroughly until well mixed.
  • Bring the mixture to a gentle boil, then reduce heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.
  • Taste and adjust seasoning with salt, pepper, and additional buffalo sauce if desired.
  • Serve hot in bowls and top with your favorite toppings.

Notes

Chili often tastes even better the next day. Store in an airtight container, let flavors meld overnight in the fridge. For deeper flavor, consider slow cooking for 6-8 hours.
