  • 4 pieces Tortilla Wraps Soft and inviting
  • 1 cup Fried Rice Fluffy and filling
  • 1 cup Greek Yogurt Creamy and cooling
  • 1 cup Corn Sweet and crunchy
  • 1 medium Onion Diced, adding depth

  • 1 cup Lettuce Chopped, crisp and refreshing
  • 1 medium Red Pepper Diced, adding sweetness
  • 2 tablespoons Mayonnaise Lending creaminess
  • 1 tablespoon Frank’s Hot Sauce The star for spices

Preparation

  • Marinate the Chicken: Start by marinating the chicken thighs in a mixture of olive oil, garlic powder, paprika, salt, pepper, and lemon juice. For the best flavor, let it marinate overnight or at least 30 minutes.
  • Cook the Chicken: Heat a skillet over medium-low heat. Cook the marinated chicken thighs for 8-10 minutes until they’re golden brown and fully cooked through.
  • Make the Spicy Mayo: In a small bowl, mix mayonnaise, Frank’s Hot Sauce, and chopped parsley until smooth.

Assembly

  • Lay a tortilla flat on a clean surface. Start by spreading a generous layer of your spicy mayo sauce. Follow it up with a scoop of fried rice and a dollop of Greek yogurt.
  • Lay the golden chicken pieces and the diced vegetables evenly on top.
  • Carefully fold the burrito tightly. Place it seam-side down in a heated pan over low heat. Toast each side of the burrito until golden brown and crisp, which should take about 2 minutes per side.
  • Slice the burrito in half and serve immediately.

Notes

Consider adding cheese for extra creaminess or substituting with different vegetables based on preference.
