  • 3 pieces roasted bell peppers (jarred or home-roasted peppers)
  • 11 ounces feta cheese
  • 2 ounces feta cheese for mashing (50 g)
  • cup Greek yogurt
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons vinegar
  • 1 clove garlic (grated, or more to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (more or less to taste)

Preparation

  • Start by gathering your kitchen tools, especially a food processor.
  • To your food processor, add the 3 roasted bell peppers, 11 ounces of feta cheese, ⅔ cup of Greek yogurt, 2 tablespoons of extra virgin olive oil, and 2 tablespoons of vinegar.
  • Toss in the grated garlic, 1 teaspoon of dried oregano, and 1 teaspoon of red pepper flakes.
  • Process the mixture for 2 minutes, or until it reaches a creamy consistency.
  • In a serving bowl, take 2 oz of feta and mash it with a fork for added texture.
  • Gently stir the blended dip with the mashed feta.
  • Top with a sprinkle of oregano, chili flakes, and a drizzle of olive oil before serving.

Notes

Feel free to add herbs or spices according to your taste. Fresh basil or parsley can lighten the flavors, while lemon juice can add freshness. You can also include olives or sun-dried tomatoes for added complexity.
