Preparation

  • Cook the rice noodles according to the package instructions. After cooking, drain and rinse under cold water to cool them down.
  • In a large bowl, toss together the mixed greens, shredded carrots, sliced cucumber, bell pepper, chopped green onions, cilantro, and mint until well combined.
  • In another bowl, whisk together the soy sauce, grated ginger, honey (or maple syrup), rice vinegar, sesame oil, and chili paste until well incorporated.

Assembly

  • Pour the spicy ginger dressing over the salad and gently toss to ensure everything is evenly coated.
  • Incorporate the cooled rice noodles and peanuts (if using) into the salad, mixing gently to combine all the elements.
  • Serve immediately or chill the salad in the fridge for 30 minutes to let the flavors meld together beautifully.

Notes
