For the Potatoes

  • 2 pounds baby potatoes Small, creamy varieties are ideal for roasting.

For the Glaze

  • 3 tablespoons olive oil Rich and aromatic for a crispy finish.
  • 3 tablespoons Sriracha sauce Provides bold spiciness.
  • 2 tablespoons honey Balances the heat of the Sriracha.
  • 1 tablespoon soy sauce Adds savory depth to the flavor.
  • 1 teaspoon garlic powder Enhances the glaze with aromatic flavor.
  • to taste salt and pepper Essential seasonings to elevate flavors.
  • to taste fresh cilantro or green onions Optional for garnish.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and dry the baby potatoes thoroughly. Leave smaller ones whole and cut larger ones in half.

Mixing the Glaze

  • In a large mixing bowl, combine olive oil, Sriracha sauce, honey, soy sauce, garlic powder, and a pinch of salt and pepper. Whisk until well combined.

Coating the Potatoes

  • Toss the prepared potatoes in the glaze until completely coated.

Roasting

  • Spread the glazed potatoes in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 40-45 minutes, stirring halfway through.
  • Check for doneness by inserting a fork; it should go in easily.

Serving

  • Remove the potatoes from the oven and garnish with fresh cilantro or chopped green onions before serving.

Notes

Adjust the heat by modifying the amount of Sriracha. For crispier potatoes, broil for the last couple of minutes. Allow them to rest for a few minutes after roasting for extra crispiness.
