Ingredients
  

Marinade Ingredients

  • 1 Tbsp chili-garlic sauce
  • 1 Tbsp hoisin sauce
  • 1 Tbsp toasted sesame oil
  • 2 Tbsp reduced-sodium soy sauce
  • 1/4 cup reduced-sodium soy sauce
  • 1 1/2 lb sirloin, NY strip, or ribeye, cut into 1-inch cubes Lean cut of steak preferred.
  • 1 1/2 tsp baking soda
  • 2 tsp kosher salt, divided
  • 1 piece ginger, peeled and grated About 1 inch.
  • 2 cloves garlic, grated
  • 6 Tbsp honey
  • 2 Tbsp rice wine vinegar
  • 1 large red onion, cut into 3/4-inch pieces
  • 1 Tbsp neutral oil, plus more for the grill For greasing grill.

For Serving

  • Cooked white rice Cooked white rice For serving.

Instructions
 

Marinade Preparation

  • In a large bowl, stir together chili-garlic sauce, hoisin sauce, toasted sesame oil, and 2 tablespoons of reduced-sodium soy sauce.
  • Season the steak pieces with 1 1/2 teaspoons of salt and sprinkle with baking soda. Toss to coat.
  • Transfer to the bowl with the marinade and toss again. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight.

Making the Sauce

  • In a small saucepan over medium-high heat, combine the white parts of the scallion, grated ginger, garlic, honey, rice wine vinegar, and remaining 1/4 cup of soy sauce.
  • Stir for about 10 minutes until the sauce thickens to a sticky consistency. Season with additional salt if necessary. Let cool.

Preparing the Skewers

  • Toss the onion with 1/2 teaspoon of salt in a large bowl and drizzle with 1 tablespoon of neutral oil.
  • Alternate threading marinated steak and onion onto skewers, aiming for about 4 to 5 pieces of steak per skewer.

Grilling

  • Preheat your grill for medium heat, greasing grates with neutral oil.
  • Place skewers on the grill, rotating every 2 to 3 minutes. Brush with sauce during the last minute of cooking.
  • Grill until steak reaches desired doneness, approximately 8 to 10 minutes for medium-rare.

Serving

  • Spread cooked rice on a platter and lay skewers on top.
  • Brush with remaining sauce and garnish with green scallion parts and toasted sesame seeds.
  • Serve immediately.

Notes

For a healthier option, consider chicken or tofu. For storage, refrigerate cooked skewers in an airtight container for up to 3 days.
