Ingredients
  

Fruit Base

  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups fresh peaches, pitted and sliced
  • 60 grams granulated sugar
  • 15 millilitres lemon juice
  • 5 millilitres vanilla extract
  • 10 grams cornstarch

Crisp Topping

  • 100 grams rolled oats
  • 60 grams all-purpose flour
  • 100 grams brown sugar, packed
  • 2 grams ground cinnamon
  • 1 gram salt
  • 115 grams unsalted butter, melted

Instructions
 

Preparation

  • Preheat your oven to 175°C (350°F) and prepare a 33x23 cm (9x13-inch) baking dish by lightly greasing it.
  • In a large mixing bowl, combine the sliced strawberries and peaches. Sprinkle in the granulated sugar, lemon juice, vanilla extract, and cornstarch. Gently toss the fruit to evenly coat it.
  • Spread the fruit mixture evenly in the prepared baking dish.
  • In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Stir until thoroughly mixed.
  • Pour the melted butter into the dry topping mixture. Use a fork or pastry cutter to blend until coarse crumbs form.
  • Distribute the crisp topping evenly over the fruit layer.

Baking

  • Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbling.
  • Remove the dessert from the oven and let it cool for 10-15 minutes before serving.

Serving

  • Serve warm, optionally topped with vanilla ice cream or whipped cream.

Notes

Leftovers can be refrigerated for up to 3 days. Reheat in the microwave or oven at 175°C for 10-15 minutes.
