Ingredients
  

For the Sweet Potatoes

  • 4 pieces Sweet Potatoes Medium-sized, washed and pricked with a fork

For the Filling

  • 2 pieces Avocado Mashed and seasoned with salt and lime juice
  • 1 can Black Beans Rinsed and drained
  • 1 cup Vegetables (bell pepper, tomatoes, onion) Optional, chopped

For the Cilantro Lime Crema

  • 1 cup Cream (or Dairy-Free Alternative) Blended with cilantro and lime juice
  • 1/2 bunch Cilantro Fresh, used for flavor
  • 1 tsp Lime Juice Zesty and bright, adjust to taste
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash the sweet potatoes thoroughly, then prick them with a fork. Place them on a baking sheet.

Baking Sweet Potatoes

  • Bake in the preheated oven for 45-60 minutes, until soft and tender.

Cilantro Lime Crema Preparation

  • In a blender, combine fresh cilantro, lime juice, cream (or dairy-free alternative), salt, and pepper. Blend until smooth.

Avocado Preparation

  • Mash the avocado in a bowl and season with salt and a dash of lime juice.

Assembling the Dish

  • Once sweet potatoes are done, cut them open and fluff the insides with a fork.
  • Stuff each sweet potato with black beans, followed by the mashed avocado. Drizzle with cilantro lime crema.
  • Add any additional fresh veggies you like and serve warm.

Notes

For extra flavor, add spices like cumin or chili powder to the black beans. You can microwave the sweet potatoes for quicker preparation, but oven baking enhances flavor.
