  • 1.5 cups shredded Mexican cheese blend A melty topping that pulls everything together.
  • 3/4 cup sour cream A cool, creamy contrast to the spices.

Instructions
 

Cooking the Beef

  • Cook the beef in a sauté pan over medium heat, breaking it apart until brown, about 5-7 minutes.
  • Add the taco seasoning and water or beef broth, stirring for an additional minute.
  • If using refried beans, stir them in until well combined, adjusting consistency with water if needed.

Preparing Rice and Tortillas

  • Prepare instant Mexican rice according to package instructions, or reheat leftover rice.
  • Warm tortillas in the microwave for 30 seconds to make them pliable.

Assembling the Burritos

  • Lay a tortilla flat and add 2 tablespoons of the meat mixture in the center.
  • Top with cooked rice, a handful of Fritos or Doritos, cheese dip, shredded cheese, and sour cream.
  • Fold the sides of the tortilla inward and roll from one end to form a burrito.
  • Repeat with remaining tortillas and fillings.

Serving

  • Optionally toast burritos in a skillet over medium heat, seam side down, for 2-3 minutes per side until crispy.
  • Serve immediately with salsa on the side.

Notes

Make ahead by cooking beef and preparing rice in advance. Adjust taco seasoning for spice preference. Leftovers can be wrapped tightly and refrigerated.
