Preparation

  • Slice the halloumi into 1/4-inch thick pieces.
  • Chop the bell peppers and cucumbers into bite-sized pieces.

Cooking

  • Heat a non-stick skillet over medium heat and add the olive oil.
  • Fry the halloumi slices for 2-3 minutes on each side until golden brown.

Assembly

  • Lay a tortilla flat and layer with halloumi slices and fresh veggies.
  • Drizzle sweet chili sauce over the fillings.
  • Squeeze lime juice over the mixture and roll up the wrap tightly.

Notes

For an added layer of flavor, marinate the halloumi in lime juice and cayenne before cooking. You can add fresh herbs like mint or cilantro for extra freshness. If you enjoy heat, include sliced jalapeños or chili flakes.
