Preparation

  • Peel and dice the sweet potatoes into small, even cubes.
  • Chop the onions and bell peppers into bite-sized pieces.

Cooking

  • In a large skillet over medium heat, pour in the olive oil.
  • Add the diced onions and sauté until translucent, about 5 minutes.
  • Add the sweet potatoes, smoked paprika, salt, and pepper to the skillet, cooking for 10-12 minutes until slightly softened.
  • Fold in the bell peppers and cook until tender, around 5 minutes.
  • Create wells in the mixture and crack an egg into each well. Cover the skillet and cook for 4-6 minutes until the whites are set but yolks are runny.
  • Serve hot, sprinkled with fresh herbs if desired.

Notes

Ensure sweet potatoes are cut uniformly for even cooking. Avoid overcrowding the pan to achieve proper caramelization.
