Activation

  • In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until it froths.

Dough Preparation

  • In a large mixing bowl, mix together the all-purpose flour and salt. Add your yeast mixture and olive oil, and mix until a cohesive dough forms.

Kneading

  • Transfer the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.

First Rise

  • Place the kneaded dough in a lightly oiled bowl, cover it with a cloth, and let it rise for about 30 minutes until it doubles in size.

Filling Preparation

  • In a separate bowl, combine minced garlic, fresh herbs, black pepper, and shredded cheese.

Rolling and Filling

  • After the first rise, roll out the dough into a rectangle, spread the filling evenly over it, and roll it tightly into a log.

Second Rise

  • Let the rolled loaf rise for another 15-20 minutes while preheating your oven to 375°F.

Baking

  • Brush the loaf with olive oil and bake for 25-30 minutes until golden brown.

Cooling and Serving

  • Allow the bread to cool for about 10 minutes before slicing.

Notes

Check the bread at the lower end of the baking time to prevent overbaking. Ensure tight rolling to keep the filling secure. Optionally, you can refrigerate the dough for later use.
