Preparation

  • In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, paprika, salt, black pepper, and optional crushed red pepper flakes to create a flavorful marinade.
  • Add the peeled and deveined shrimp to the marinade. Toss gently to coat and allow to marinate for 15-20 minutes.

Cooking

  • Preheat your grill to medium-high heat, around 400°F. Lightly brush the grill grates with oil.
  • Thread 4-5 shrimp per skewer, ensuring they lay flat for even cooking. If using wooden skewers, soak them in water for 30 minutes beforehand.
  • Place the skewers on the grill and cook for 2-3 minutes on each side until the shrimp turn pink and opaque.

Serving

  • Remove the shrimp from the grill and serve hot with fresh lemon wedges. Drizzle with any remaining marinade for extra flavor.

Notes

Make sure to preheat your grill properly to lock in moisture while cooking. Don’t skip the marinade, as it is crucial for flavor. Adjust seasoning for spiciness as preferred.
