Preparation

  • Preheat the oven to 350°F (175°C).
  • Core the apples carefully, ensuring the bottoms remain intact.
  • Rinse the rice under cold water until the water runs clear, then drain.
  • In a medium pan, heat olive oil and sauté the onion until translucent, about 5-7 minutes.
  • Add the pine nuts and stir until they turn golden brown.
  • Stir in the rinsed rice, ground cinnamon, and allspice.
  • Pour in the vegetable broth, bringing to a boil. Then, lower the heat, cover, and let it simmer for 15 minutes.
  • Season the filling with salt and pepper to taste and let it cool slightly.
  • Fill each apple with the rice and pine nut mixture, packing tightly.
  • Place apples upright in a baking dish and drizzle with olive oil.
  • Cover with aluminum foil and bake for 30-35 minutes.
  • Remove foil for the last 5 minutes of baking.
  • Let the stuffed apples sit for a few minutes before serving.

Notes

Allow stuffed apples to cool slightly before serving to enhance flavors. Consider using quinoa instead of rice for a lighter dish.
