  • In a large skillet, drizzle in the olive oil and heat it over medium heat until it shimmers.
  • Add the minced garlic, sautéing for about a minute until fragrant.
  • Introduce the shrimp to the skillet, seasoning with salt, pepper, and Italian seasoning. Cook for 2-3 minutes until they turn pink.
  • Stir in the chopped sun-dried tomatoes and artichoke hearts. Cook for an additional 2 minutes.
  • Pour in the chicken or vegetable broth and heavy cream. Stir until simmering and the sauce thickens.
  • Add the chopped spinach and stir until wilted, about 2-3 minutes.
  • Stir in the grated Parmesan cheese, allowing it to melt. Taste and adjust seasonings as necessary.
  • Plate your Tuscan shrimp mixture immediately and sprinkle fresh basil over the top before serving.
