Ingredients
  

For the Shrimp

  • 1 lb shrimp, peeled and deveined for a tender bite
  • tbsp voodoo seasoning (divided) bringing warmth and depth

For the Sauce

  • 1 cup fish broth enriching the sauce with umami
  • 5 tbsp Worcestershire sauce enhancing the savory profile
  • 1 tbsp tomato paste bonding the flavors together
  • 3 cups dark lager beer offering robust flavor
  • cups heavy cream creating a luscious texture
  • 1 tbsp butter adding richness to the sauce
  • 2 leaves bay leaves imparting subtle aroma
  • 1 lemon juiced for a zesty finish
  • 1 tbsp sriracha introducing a spicy kick
  • 1 diced tomato adds a burst of freshness
  • ½ small onion, finely chopped providing sweetness
  • 3 cloves minced garlic infusing aroma
  • 1 diced red chili, seeds removed for a milder heat
  • Cooking oil Cooking oil for sautéing
  • Fresh chives Fresh chives for garnish lending a vibrant color

Instructions
 

Marinate the Shrimp

  • In a mixing bowl, coat the shrimp with 2½ tablespoons of the voodoo seasoning. Let them marinate for about 15 minutes to absorb the flavors.

Cook the Shrimp

  • Heat a skillet over medium heat and add a bit of cooking oil. Sauté the shrimp until they turn pink and opaque, approximately 2-3 minutes per side. Once cooked, set aside.

Sauté the Onion

  • In the same skillet, add the chopped onion and sauté until soft and translucent, about 4-5 minutes.

Add Garlic and Chili

  • Stir in the minced garlic and diced red chili, cooking until fragrant, about 1-2 minutes.

Bloom the Spices

  • Add the tomato paste and the remaining voodoo seasoning, stirring to roast the spices and fully incorporate them into the onion and garlic mixture.

Deglaze the Skillet

  • Pour in the dark lager beer, scraping any browned bits off the bottom of the skillet. Allow it to simmer until reduced slightly, about 5 minutes.

Incorporate Remaining Ingredients

  • Mix in the diced tomato, fish broth, Worcestershire sauce, and bay leaves, stirring to blend all the components together. Let it simmer for another 5 minutes.

Cream and Sriracha

  • Gradually stir in the heavy cream and sriracha until well combined. Return the shrimp to the skillet, cooking everything together for an additional 2-3 minutes.

Finish the Sauce

  • Remove from heat and add the lemon juice and butter, stirring until the butter melts and enriches the sauce. Garnish with fresh chives before serving.

Notes

For best results, consider letting the shrimp marinate for at least 30 minutes. Serve hot for the best flavor experience. Adjust the spice level according to your taste.
