White Chocolate Raspberry Tiramisu

Ingredients
  

For the Raspberry Syrup

  • 4 cups raspberries Choose fresh or frozen, bursting with flavor.
  • ½ cup water To help dissolve the sugar.
  • ¾ cup granulated sugar Sweetens the syrup.
  • 1 tablespoon lemon juice Adds brightness to the syrup.

For the Filling

  • 1 ½ cups heavy cream For a rich and luscious filling.
  • 16 ounces mascarpone cheese Soft and creamy, forming the heart of the tiramisu.
  • ¾ cup granulated sugar Sweetens the filling.
  • ¾ cup raspberry syrup Made from the raspberries.
  • 1 teaspoon vanilla Infuses the filling with warm, sweet notes.

For Assembly

  • 1 package Savoiardi ladyfingers (7 oz) These sponge cookies soak up the raspberry syrup beautifully.
  • 1 ounce good-quality white chocolate Finely grated, for an elegant finishing touch.

Instructions
 

Make the Raspberry Syrup

  • In a saucepan, combine the raspberries, water, sugar, and lemon juice.
  • Bring the mixture to a simmer over medium heat, stirring gently. Cook for about 10-15 minutes until the raspberries break down and the syrup thickens slightly.
  • Once done, strain the syrup through a fine mesh sieve to remove the seeds, pressing on the solids to extract all the syrup. Allow it to cool completely.

Make the Filling

  • In a large mixing bowl, whip the heavy cream until soft peaks form.
  • In another bowl, mix the mascarpone cheese, sugar, raspberry syrup, and vanilla until smooth.
  • Gently fold the whipped cream into the mascarpone mixture until well combined.

Assemble the Tiramisu

  • Quickly dip each ladyfinger into the cooled raspberry syrup, ensuring they soak without becoming too soggy.
  • Arrange a layer of dipped ladyfingers in the bottom of a rectangular dish. Spread half of the mascarpone filling over the top.
  • Add another layer of dipped ladyfingers followed by the remaining mascarpone filling. Use a spatula to smooth the top.
  • Grate the white chocolate over the top for a beautiful finish. Cover and refrigerate for at least 4 hours, or overnight for the best flavor.

Notes

For a stunning presentation, use a glass trifle dish. You can substitute berries if desired; strawberries or blueberries provide interesting flavor variations. For a darker chocolate note, sprinkle some cocoa powder on the top layer. Always ensure your ingredients are at room temperature before combining for the best results.
